  • Oil
  • Mustard seeds
  • Curry leaves
  • Onion, finely chopped
  • Green chilies, finely chopped
  • Ginger-garlic paste
  • Tomatoes, finely chopped
  • Capsicum, finely chopped
  • Carrot, finely chopped
  • Peas
  • Salt to taste
  • Turmeric powder
  • Red chili powder
  • Garam masala
  • Coriander powder
  • Tomato ketchup
  • Coriander leaves for garnish

Method

  1. Boil Pasta: Begin by boiling the pasta in salted water until it’s al dente. Drain and set aside.
  2. Prepare the Masala: In a pan, heat oil and add mustard seeds. Once they start to splutter, add curry leaves. Sauté the finely chopped onions and green chilies until the onions turn translucent.
  3. Add Veggies: Add the ginger-garlic paste and sauté until the raw smell disappears. Follow with chopped tomatoes and cook until they become soft and mushy.
  4. Spice it Up: Add the chopped capsicum, carrot, and peas. Sprinkle salt, turmeric powder, red chili powder, garam masala, and coriander powder. Mix well and cook until the vegetables are tender.
  5. Combine Pasta and Masala: Add the cooked pasta to the pan and mix thoroughly. Add tomato ketchup and adjust the seasoning as needed. Let it cook for a few minutes, allowing the pasta to absorb the masala flavors.
  6. Garnish and Serve: Garnish with fresh coriander leaves and serve hot.
